Highlights
“From Finca Deborah in Volcán, Chiriquí, Panama, at over 1,900 meters elevation. Volcanic soils, shady cloud forest, and cool nights ensure slow cherry ripening and complex aromatics. The Aril process combines extended natural carbonic maceration with washed finish. Carefully selected fully ripe Geisha cherries are placed in tanks, flushed with nitrogen, and fermented under controlled temperature and pH. After fermentation, cherries are washed and depulped, then dried in three phases on raised beds — first in the sun, then more protected, and finally in cool shade until reaching about 11% moisture.”
