“Grown at Finca Deborah in Volcán, Chiriquí, Panama, at over 1,900 meters, Umbra Geisha thrives in volcanic soil and cloud-forest shade. Cherries are naturally dried on raised beds in a special drying house until reaching 11% moisture, then rested to stabilize flavor. Farm owner Jamison Savage pioneered carbonic maceration and anaerobic processing in coffee. No pesticides or herbicides are used; organic fertilizers and a proprietary mineral blend nourish the trees.”
