“Tasting Notes: White Peach, Dark Chocolate, Pomegranate Roast Level: Light Process: Honey Origin: Costa Rica Region: West Valley Subregion: Atenas Producer: Coope Atenas Altitude: 1400 MASL Species: Arabica Variety: Caturra, Red Catuaí Grade: Top Lot Costa Rica Coope Atenas White Honey is a light roast with notes of white peach, pomegranate, and dark chocolate. White honey is the lightest of Costa Rica's honey processes. After the skin and pulp are removed from the coffee cherry, a thin layer of sticky fruit called mucilage stays on the seed while it dries in the sun on patios. No honey is added; the name comes from the way that layer looks and feels as it dries. The darker honeys, red and black, run sweeter and heavier. White honey sits at the clean end of the range, closer to a washed coffee: clear, lively acidity with a soft sweetness underneath. We roast it light and with precision to keep the peach and pomegranate up front. This lot, traded as Volcanic Treasures, is assembled from selected harvests delivered to the mill of Coope Atenas, a cooperative of about 1,300 smallholder members in Costa Rica's West Valley. Brew it as a pour-over or drip to let the fruit come through. If you like clean, bright washed coffees, this is an easy way into honey process: the same clarity, with a rounder sweetness.”
