Highlights
“Phoenix comes from the Apaneca-Ilamatepec volcanic chain in western El Salvador, the country's largest coffee region and probably where the first coffee tree was planted in the mid-19th century. The coffee is grown under a highly diverse shade canopy that protects biodiversity. Coffee rust wiped out many plantations in the region and forced a decade of replanting with resistant varieties; in 2005 the cooperative decided to convert to organic farming despite lower yields, and membership fell from 23 producers to 11. Those eleven now pool their small lots into one coffee, a Tabi and Castillo washed profile with dark chocolate and honey, roasted in Bordeaux.”
