Highlights
“Githembe is one of three factories run by the Thiririka Farmers Cooperative Society near Kiganjo, alongside Ndundu, with roughly 1,500 active members growing SL-28, SL-34, Ruiru 11 and Batian on smallholdings. Cherries are hand-sorted and pulped at Githembe, fermented for 12 to 14 hours, then washed in channels and graded by density; the denser parchment soaks in clean water for up to 24 hours before a day on jute and 12 to 20 days on raised beds. The lot is screened AB (16/17). L'Alchimiste roasts fast with a short development and a low finish temperature to keep the cup explosive and fruit-forward.”
