“Dini is a Metad project coffee from the Alaka farm in Hambela, Guji, about 400 km south of Addis Ababa in a landscape of old-growth forest and endemic varieties. The lot is built on the rarely seen 74140 variety — a small, dense bean that resists leaf rust — grown between 2,000 and 2,100 m under canopy. Cherries are processed at the Alaka washing station, whose 2,000 m setting and cool, stable climate allow a slow, gentle dry that limits insect damage. L'Alchimiste roasts it light for filter, and the cup is unusually delicate for a natural: black tea and red fruit over a floral finish.”
