“Alaka nature is the natural-process twin of the washed Alaka lavé: same Metad producer group, same hand-picked forest coffee from the Alaka area of Guji, but dried in the cherry instead of washed. Metad is based in Bishan Fugu and was founded by members of the Ethiopian diaspora who came home after years in the United States to build traceability around the country's best-known crop; the group also funds social and environmental projects locally. The natural process pushes the fruit forward — peach, strawberry and rose — and L'Alchimiste answers with a fast roast and a short development time plus a light-to-medium final temperature to keep sweetness and acidity in balance.”
