“This exceptional Bourbon Ají Red Honey lot comes from El Placer Farms, led by Sebastián Ramírez, a fourth-generation Colombian producer recognized for developing some of the most experimental and valued coffees in Colombia. The farm is located between the regions of Quindío and Huila, at altitudes ranging from 1,200 to 2,100 meters. The Bourbon Ají variety is uncommon and highly appreciated for its aromatic intensity and natural sweetness. The harvest is manual and selective, followed by a rigorous selection process. A Red Honey process with controlled anaerobic fermentation is applied, preserving a high amount of mucilage. The drying is slow and controlled, with periodic movements to ensure uniform moisture loss.”
