Bourbon Sidra is the variety Néstor selected for this microlot. The Advanced Washed protocol starts with a first oxidation of whole cherries, then anaerobic fermentation, submerged fermentation with musts from previous lots and a carefully controlled drying — a lot whose work has helped El Diviso reach international recognition, including a first place at the Brewers Cup of Ireland.”
