“Finca El Diviso lies in the mountains of Pitalito, in southern Huila, and is run by Néstor Lasso with his brother Adrián and Jhoan Vergara. Chiroso is a variety that has drawn real interest in Colombian specialty coffee for its aromatic complexity; long linked to mutations or selections of traditional Colombian varieties, genetic work on some material identified as Chiroso has found ties to ancestral Ethiopian coffee populations. Néstor works it here as a natural with controlled fermentation, beginning from manually selected, ripe cherries that are cleaned and disinfected before processing.”
