“Finca El Diviso is a family project in the mountains of Pitalito, Huila, where Néstor Lasso and his brother Adrián work with Jhoan Vergara on fermentation and processing protocols. Bourbon Ají is a variety grown in Colombia and especially linked to the mountains of Huila; despite the name it is not automatically part of the Bourbon family — genetic work on material identified as Bourbon Ají has connected it to old Ethiopian coffee populations, and the Ají name comes from the spice-like aromas producers find in the plant and its cherries.”
