“Johnathan Zarza's third-generation family project Zarza Coffee, based in Bruselas, Huila, brings generational knowledge to this Pink Bourbon lot. A 48-hour controlled oxidation in whole cherry is followed by double fermentation, a thermal shock to lock aromatic compounds, then thorough washing and drying to 10.6% moisture. The result is a semi-washed profile with blood orange, pink pepper, cardamom, and caramel complexity.”
