“Peñas Blancas brings together a collective of small producers around the famous Vergara, Lasso and Gasca family farms in Huila. A centralized processing center gives growers access to advanced infrastructure, training and better pay for long-term sustainability. The name comes from the whitish rocky peaks that overlook the valley. Cherries are harvested at full ripeness (22-26 °Brix), given a precise thermal shock, fermented anaerobically for 72 hours, then bathed in mosto (fermentation juice) for 24 hours before sun and mechanical drying below 11.5% moisture.”
