“Nestor Lasso, at just 22 years old, together with his brother Adrian (24) and partner Jhoan Vergara, created El Diviso by merging two farms—El Diviso and Las Flores—in Pitalito, Huila, Colombia. Partnering with CATA Export, their exceptional coffees have earned international recognition, winning 1st place at the Brewers Cup Ireland and 3rd in Austria. Their Sudan Rume variety undergoes a meticulous process: 40 hours of oxidation, 40 hours of anaerobic fermentation, and 28 hours of submerged fermentation, followed by a thermal shock at 65-70°C, then controlled drying in a stainless steel dehumidifier below 37°C.”
