“In the mountains of Lancang, in the village of Nanxiong Xinzai in Pu'er prefecture, lies Tianhao Estate, founded in 2007 by Mme Wei Yunhua, who began planting coffee trees in 2006. What started as a bold idea grew into a 2.67 million square meter estate with more than nineteen years of cultivation. The farm grows Catimor and Geisha using ecological, sustainable methods: no pesticides, only biological pest control and homemade organic fertilizers. The estate built its own processing facilities so the journey from cherry to green bean happens entirely on the mountain. For this lot, ripe cherries were spread on raised drying beds, covered with canvas, and left to ferment — sugars transforming through lactic and acetic metabolic pathways into a complex palette of esters and fruity aromas. Cherries were then dried with their skin and mucilage under the Yunnan sun to concentrate sweetness and stabilize aromas, before hulling and AI-assisted optical sorting.
