“Villamaria is a historic Colombian municipality in the high mountains next to Manizales, part of the UNESCO-recognised Coffee Cultural Landscape and famous for its deeply rooted, generational farming traditions. This lot of Pink Bourbon comes from local smallholders at 1,800 metres and scores 88.75 CVA. The anoxic natural ferment seals the cherries beneath plastic sheeting kept cool by cold water poured on top, holding a low, stable temperature so the fruit develops with no oxygen; the coffee then dries in cherry on raised beds for up to 20 days.”
