“The Shyira Washing Station is the officially highest processing station in Rwanda. The coffee cherries come from altitudes of up to 2300 meters above sea level. The optimal weather conditions, soil composition, and elevation provide an ideal basis for extraordinary coffees. After harvest, the cherries are depulped using the traditional Ikininba method, where people stand in fermentation tanks and stomp the cherries to remove the mucilage. The coffee is then fermented for twelve hours before being carefully sorted and dried for 30-35 days on drying beds.”
