“Greenland Estate sits in the Thalanar region of the Valparai plateau in Tamil Nadu, 200 acres at 1,539-1,700 masl — among the highest farms Kāpikottai sources from. This lot, Sln09 with Cauvery and San Ramon, was picked ripe, pulped, fermented 18 hours, washed and then slow-dried for a fortnight on raised beds. The cool microclimate gives a layered cup: sugary sweetness, apricot-and-strawberry acidity and a spread of potpourri florals. The effervescence reminded the roaster of the rāga Shankarābharanam, after which the coffee is named. Best rested 20 days for V60 or AeroPress.”
