“Josie had been hunting a Pink Bourbon while good spot coffees were scarce, and Mark at Caravela pointed their buyers to this lot from Willyan Rojas at Finca La Montañita in Pitalito, Huila. It cupped bright and sweet with white stone fruit and a pleasant floral aroma, so they took the advice. Willyan grew up in a coffee-farming family and has focused on specialty production since 2003, building La Montañita and its processing along the way. This lot follows his usual routine: 36 hours of fermentation in covered tubs without water, two washes, then ten days of drying under cover. Josie had been buying most single origins as spot offerings out of Caravela's Australian warehouse, which let them cup a lot before committing. Caravela is winding that programme down in favour of forward contracts, so future purchases mean committing earlier without assessing the coffee after it lands.”
