“Irving Farm opened its first cafe in Gramercy in 1996, when Steve Leven and David Elwell founded the company, and this 50/50 blend marks 30 years of roasting in New York. Half is Santa Isabel, the Keller family's organic and biodynamic-practicing farm in Santa Rosa, Guatemala, bought since 2012; half is Monserrate, a group of about 75 smallholders in Huila, Colombia, bought since 2013 and each fermenting washed lots at their own small mill. Director of Coffee Jay had been blending the two in his kitchen for years whenever both lots were available.”
