“Habtamu Fikadu Aga is a producer and exporter running several washing stations in Ethiopia. This lot is a town separation of cherries delivered by 160 smallholder farmers in Danche Kebele, Gedeb, growing Kurume and Dega at 1,900-2,100 MASL. Cherries are collected at peak ripeness, sorted, depulped and fermented in water for 48-72 hours, then given a further 12-hour water fermentation before rinsing and drying on raised beds for 10-12 days. It marks Ilse's first year buying from Habtamu.”
