“Danche is a washing station in Gedeb, Yirgacheffe, where about 800 smallholders farm two to three hectares each at 2,200 metres and deliver Kurume and Wolisho cherries. For this yellow honey lot the seeds are depulped and dry-fermented 48-72 hours before 10-14 days on raised beds. Ilse sources it through SNAP, and this is its second year buying a honey-processed lot from Danche.”
