“Bonita Springs is a 36-hectare farm in Alto Lino, Boquete, Panama, worked by the Miró family for more than 80 years. Rivers and natural springs run through the property, and cool Atlantic air meeting warmer Pacific breezes gives it varied microclimates; coffee grows among citrus trees, and Arturo and Olmedo Miró added processing and drying facilities in 2017 as the farm moved toward specialty production. This Wush Wush lot, an Ethiopian variety the farm introduced as it broadened its plantings, was dried whole on raised beds with regular turning before the fruit was removed.”
