“Pillcocaja is a seven-hectare coffee farm in the Yunguilla Valley of Azuay, Ecuador, established in 2008 and run by Ana María Crespo alongside Nicolás Crespo. Coffee is cultivated at 1,650 to 1,700 masl beneath native faique trees, with post-harvest work supported by an on-site wet mill and raised-bed drying. This Typica lot is processed anaerobic washed, combining sealed fermentation with a washed finish for a bright, aromatic cup of green grape, pear, and geranium.”
