“Habtamu Fekadu Aga operates this washing station in Yirgacheffe, taken over in 2020 and upgraded with a Penagos pulping machine in 2022. Cherry is collected from registered outgrowers documented through farmer receipts for full traceability. After mechanical depulping leaving a small amount of mucilage on the parchment, the coffee undergoes a 24-hour fermentation, then is hand-washed and dried on raised beds for 9–12 days out of direct sunlight with regular turning and defect inspection. Kurume and Dega are regional Ethiopian landrace varieties that frame the delicate floral, citrus, and stone-fruit profile. The result is a transparent cup with defined acidity, clean sweetness, and a delicate texture reflecting careful washed processing.”
