“Chelbesa washing station in Gedeb, Ethiopia serves around 672 contributing farmers working at roughly 2,173 masl, where the local 74158 and 74112 selections are planted. Cherries are sorted by flotation and eco-pulped before a two-to-three-day fermentation, followed by a 12-hour soak. The parchment dries for seven to ten days on raised beds and is sorted once more before dry milling. The anaerobic wash keeps the cup defined and fruit-forward, with apricot, plum, and fig carried by a clean, tea-like finish.”
