Highlights
“Digna Nuñez and her husband Glaystter Aguilar established Talamanca Coffee Farm in Piedra Candela, Volcán, Panama, in the 1990s, building on land Glaystter's parents began developing in the 1960s; their sons now work in the business, a fourth generation. Processing for this lot was handled by TNT Lab, a Panama-based project that applies controlled fermentation and drying protocols to cherry from partner producers. The Gesha cherries fermented whole at 9°C for four days, were then depulped and fermented again with water and mucilage for four more days, and dried for 20 days in a cold room.”
