“Finca El Paraíso is located at 1,850 masl in the village of El Naranjal in Buesaco, Nariño. José Ignacio Gómez, a second-generation coffee producer, has owned the farm since 2008. Principle harvest occurs from May through August, with an intermediate harvest during December and January. This Gesha lot was harvested in January 2026. Ripe cherries are hand-picked, manually sorted, washed, and density-separated. The whole cherries ferment for 24 hours in oxygen-excluded tanks, are mechanically depulped without water, then undergo a second 24-hour fermentation in dry mucilage. Drying begins with five days of solar exposure and is completed mechanically for three days at approximately 35°C.”
