“Bosque 3 BANC comes from the Bosque lot at Jaramillo, above 1,700 metres on Hacienda La Esmeralda, the Peterson family's estate in Boquete. The lot covers 2.1 hectares of roughly 15-year-old trees on steep, shaded slopes. Cherries were harvested on 19 January 2026, pre-dried two days on raised beds, fermented four days in a sealed stainless-steel tank inside a cold room, then dried 41 days under regulated temperature, humidity and airflow to finish as a natural.”
