Run by Paul and his son Kevin, Mikava focuses on small, day-by-day harvests. The hybrid washed method uses short fermentation in thick-walled steel tanks, followed by drying on raised and shaded beds and controlled silo drying. This lot stood out for its round, juicy mouthfeel, refined acidity, and soft elegant florals.”
