“Elzer Garcia began growing coffee in 2015, inspired by neighboring successes. Starting with just 100 plants, he expanded to 7,000 plants across nearly two hectares. He maintains Pajuro trees for natural shade. The harvest is carried out by hand with local villagers. Cherries are pulped and fermented for 48 hours before being washed and dried in thin layers, protected from overnight moisture.”
