“Acacia Hills sits on Mount Oldeani's volcanic slopes, nearby the Ngorongoro Conservation Area. Leon, a third-generation Tanzanian coffee producer, returned from a career in pharmacy to pivot the family business from commodity to specialty in the 2000s. Leon and his wife, Aideen, acquired and rehabilitated Oldeani land in 2007, replanting with quality-forward cultivars. Fresh red ripe cherries are separated by density and pulped within 10 hours of harvesting using water from the mountain springs. The lot is then dry fermented in cement tanks under shade for 36-40hrs, washed in channels, float sorted, and dried under shaded raised beds.”
