“José Joaquin Bolaños, a second-generation producer from San Agustín, Huila, Colombia, grew this competition-winning Gesha on his three-hectare farm Finca Villa Sofia. The lot took top prize in the Southern Division of the Copa de Oro competition. After hand-sorting for peak ripeness, the cherries underwent a double fermentation: 60 hours whole-cherry in a hopper, then 40 hours dry fermentation after depulping, followed by 15–20 days on raised beds in a solar dryer.”
