“Ginimao Estate, stewarded by Steven Rebello in the Bababudangiri range of India's Western Ghats, farms under a dense shade canopy that protects wildlife habitat and limits pruning and chemical use. This lot is the Indian-bred S-795 cultivar, hand-picked and density-sorted before depulping, then inoculated with baker's yeast for roughly 18 hours of controlled dry fermentation. It is mechanically washed and dried for about 15 days on raised beds and patios.”
