“Edinson Elias Muñoz has been growing coffee in San Agustín for thirty years on Finca Pensilvania, a farm that has been in his family for roughly a century. Here, Edinson cultivates several rare varieties including Java, Laurina, Geisha, and Sudan Rume. This heirloom Sudan Rume lot underwent a deliberate double fermentation: 48 hours whole-cherry in sealed barrels, then 36 hours after depulping in open tanks, followed by 40 days of solar drying on raised beds. The lot placed 3rd in the Southern Division of the 2025 Copa de Oro, a competition organized by Osito Coffee to surface exceptional producers in southern Huila.”
