“The Capa Chamba family grows coffee at their 20 hectare farm, Reina de la Asunción, in Cangonamá Parish, Loja’s Paltas Canton. The farm grows Typica Mejorado and Criollo, a locally adapted Typica-derived variety unique to Loja. Selective hand-harvesting, same-day depulping, 48-hour sealed-tank fermentation, and 12–15 days on covered raised beds produce a clean, uniform cup.”
