“This lot of SL28 fully grown in Colombia comes from La Muralla, San Agustin, Huila. Esnaider and Augusto Ortega have brought Kenya's famous varietal into the heart of Huila. Cherries are picked every 21 days at peak ripeness, floated and hand selected, then depulped the next morning and dry fermented for an average of 36 hours in oak tanks. It's rinsed four times, left to drain in plastic bags for 10 hours, then dried for 20 days in shade.”
