Highlights
“Wilmer Cubillos bought Finca El Rosal in 2006 and farms its 10.5 hectares at 1,650 metres in El Rosario, Acevedo, in Huila — warm days and cool nights that build dense, sweet cherry. A first-generation coffee farmer, he has spent the years since tightening the operation: a shaker to separate parchment, fermentation tanks lined with slab plating so no off-flavours creep in, and plans for raised drying beds. This lot is Tabi, the Cenicafé cross of Typica, Bourbon and Timor released in 2002 for leaf-rust resistance without giving up cup quality. Cherry ferments eighteen hours in sacks, is pulped, then sits six more hours in a tank before being washed in clean water and raked regularly on the drying beds. Sourced through Sucafina.”
