“Faysel Abdosh founded Ayla washing station in 2018 and named it after his niece; it is the first Sidama station for Testi Specialty Coffee, which also runs several in Guji. Around 800 farmers deliver selectively handpicked cherry from plots averaging half a hectare at 1,950-2,000 metres. Cherry is inspected and sorted, pulped, fermented 36-48 hours, washed in clean water and dried on raised beds that are raked frequently for even drying.”
