“Ketiara is a cooperative of smallholder families in Aceh, on the northern tip of Sumatra, where farms average a few hectares on the slopes around Lake Tawar. The coffee is wet-hulled the way only Indonesia does it - hand-picked cherries pulped at or near the farm, fermented overnight, washed the next morning and sun-dried for half a day to two days, then finished by collectors and exporters in Medan. That layered handling is what gives the cup its spicy, full-bodied character of dark chocolate and herbs. This lot is certified organic.”
