Highlights
“Senza is Gringo's own decaf line, and this espresso blends two sugarcane-EA decafs: a natural from Igarape in Brazil and a natural Guji Hambella from Ethiopia. Both are decaffeinated with ethyl acetate, the method that steams the green beans to open the cell structure, then washes the caffeine out in several passes with a water and ethyl-acetate solution before steaming off the residue and drying the beans back to their original moisture. Ethyl acetate occurs naturally in sugarcane, coffee and fruit, and the process is chosen because it is selective for caffeine and leaves the bean's own character intact. It is available all year.”
