“Negele Gorbitu is a cooperative founded in 1975 in the Yirgacheffe highlands, now gathering more than a thousand smallholders who each farm small plots where coffee grows among native trees and food crops. For this micro-lot the ripest cherries are sealed into airtight stainless-steel tanks and the oxygen is pulled out under vacuum; they then ferment four to five days in a carbon-dioxide-rich environment, which presses aroma and flavour from the sweet pulp into the seed. The lot is 300 kg from the January 2026 harvest, dried in the sun on raised beds.”
