“Gringo's decaf comes from Dimtu Tora, a village in the Guji zone of southern Ethiopia, where the Hambela Wamena washing station was founded in 2022 among forest, smallholder plots and coffee trees whose red cherries ripen in the shade of native trees. The coffee is dried in the fruit - the traditional natural method - and only then decaffeinated, using ethyl acetate derived from fermented sugarcane: the green beans soak in a water and EA bath that binds the caffeine, are rinsed and treated again until at least 97% has been removed, then steamed to clear any residue. The method exists to keep what the coffee tastes like, and this cup is mild and balanced rather than hollow: orange, milk chocolate and Brazil nut, with the citrus and nut tones the shop's copy names. Harvest ran December 2024 to January 2025, the lot is 1,800 kg, grown between 1,950 and 2,100 metres from native landrace varieties, and organic.”
