Highlights
“Corazón de Jesús is the Alvarado Fonseca family's micro-mill in Pérez Zeledón, in Costa Rica's Brunca region under the Chirripó massif. The family moved from vegetable farming to coffee in 2009, took their first significant harvest in 2012 and founded the mill in November 2015, building it on almost no budget with borrowed equipment and home-made drying beds. It has since become one of the country's most decorated processors: fifth at Cup of Excellence in 2021, third in 2022, second in 2024 and a double first in 2025, in both the washed and the natural categories. This 78 kg microlot comes from Finca El Salitre and is pure Moka. Only ripe cherries are picked and floated; the survivors are sealed anaerobically in polypropylene sacks in the shade for two days, then dried on concrete patios for ten days, turned three times a day and heaped under cover at night, before finishing 15 days on raised beds to 10.5% moisture.”
