Highlights
“Jairo Arcila spent more than 40 years running export operations for Colombia's second-largest coffee exporter before retiring in 2019, having bought his first farm, Finca La Esmeralda, back in 1987. This is the season's last coffee from his Santa Mónica farm in Armenia, Quindío: Castillo picked selectively, water-graded and hand-sorted at the farm, then fermented 48 hours anaerobically together with whole fresh cherries so the beans keep their sweet mucilage while the fruit adds sugar. Skin and pulp come off after the sealed fermentation and the beans dry slowly on raised beds. A 72 kg lot from the June 2026 harvest.”
