Highlights
“Las Moras is a regional washed lot from family farms in Acevedo and Pitalito, in Colombia's Huila department, built around a fermentation protocol designed by two of the most recognised names in experimental processing: Jhoan Vergara of Finca Las Flores and Néstor Lasso of Finca El Diviso. Cherries go through a two-stage fermentation, aerobic first and anaerobic after, then a thermal shock, where the coffee is quickly chilled and re-warmed with cold and hot water to lock the fermentation in place. The name is Spanish for blackberries, and that is the cup: ripe dark fruit, a soft lactic roundness and a clean, lively citrus acidity. 16,000 kg lot, harvested February-April 2026, sun-dried under roof and finished in a silo.”
