Highlights
“Nemba is a washing station in Kayanza, the northern Burundi province that borders Rwanda, and it is unusually well documented: 1,074 smallholder families, each with roughly 150 trees, all farming above 1,700 metres on volcanic soil near the Kibila forest. Cherries are sorted in buckets, pulped within six hours of delivery, dry-fermented for up to 12 hours, washed in clean mountain water and then soaked for another 12-24 hours, the double soak this style is known for. Pergament dries on more than 200 raised beds for two to three weeks.”
