“Fazenda Ambiental Fortaleza has belonged to the Croce family for generations; Silvia and Marco Croce turned it into an organic model farm and their son Felipe now runs it with regenerative practices and modern technology. Bobolink is their project to link the whole chain, taking coffee from neighbouring smallholder families around Serra do Caracol, a volcanic crater range near Pocos de Caldas in Sul de Minas, and paying them better for it. Green corridors for wildlife and protected springs are part of the deal. The cup is classically Brazilian: creamy body, fine chocolate, high sweetness, nuts and dried fruit.”
