Highlights
“La Casa sits at about 1,650 masl in Aldea Pacheco, La Paz, in the Montesillos region of Honduras, and is run by Claudia Petrona Garcia Medina, a second-generation grower and agricultural engineer who cleared the old trees five years ago and replanted 3,000 Pacamara and Geisha trees along the contour lines. Only deep-red ripe cherries go into this honey lot: they rest in nylon bags for 48 hours, are depulped and rested another 24 hours, then dry on raised screens under a rain shelter for 20 to 25 days, turned every half hour. Supplies and parchment leave the farm by mule because vehicles cannot reach it.”
