Highlights
“Diego Bermudez's Red Plum P-02 is grown at Finca El Paraiso in Colombia as Castillo, at 1,960 metres. Overripe cherries are harvested and ozonated, then fermented anaerobically for 36 hours submerged in water; the coffee is pulped and demucilaginated, a culture medium carrying the Paraiso Red Fruit yeast is pressed into the fermentation tanks for 12 hours, and a thermal shock fixes the precursors before the coffee is dried in a dehumidifier. Good Brothers roast it light on a fluid-bed air roaster.”
